Carrot Cake Muffins

Nives Batistić - Vegan carrot cake muffins

When I asked Lee to give me a sentence for these muffins, he said – a smooch in a muffin. ¯\_(ツ)_/¯ What can I say, they are really really good.

(recipe makes ~24)

Ingredients:

2 cups all purpose gf flour
1/2 cup buckwheat flour
1 cup sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1tbsp cinnamon
2 cups water
1/2 cup melted coconut oil
2 tsp apple cider vinegar
2 cups grated carrot
1 grated apple

Method:

1. Preheat the oven to 180C and line your cupcake pan with liners.

2. In a medium bowl, whisk together the flour, sugar, baking powder and baking soda, salt and cinnamon and set aside.

3. In a small bowl, combine the water, oil and vinegar.

4. Add the wet to the dry, and mix until just combined, then fold in your carrot and apple.

5. Fill your cupcake pan and bake for about 30 minutes.
