Chocolate Orange and Almond Cake

One of the things I keep hearing from people when they try things made with gluten-free flour is how light everything tastes and how it actually doesn’t leave you feeling like you need a nap asap after gorging. I highly encourage you to make this delicious dessert gluten and dairy free, but don’t worry, swapping it for regular flour and dairy won’t make it any less tasty. Ingredients:

Cake:

  • 3 large eggs
  • 170g brown sugar
  • 175ml sunflower oil
  • 100ml orange juice + zest of one orange
  • 140g self-raising flour (or 140g of plain flour with 1 ½ tsp baking powder and a pinch of salt)
  • ½ tsp baking powder
  • 140g ground almonds
  • 50g cocoa powder
  • pinch of salt

Glaze:

  • 200g plain chocolate
  • 1tsp oil
  • 20g toasted flaked almonds

Method:

  1. Preheat oven to 180C, grease the tin and line it with baking paper.
  2. In a large bowl, mix the eggs with sugar, and whisk for 5-10 minutes, or until the mixture has tripled in volume.
  3. Slowly pour oil and orange juice into the egg mixture and give it a swirl until it’s all combined.
  4. In another bowl, sift the flour, ground almonds, cocoa and baking powder, and add orange zest.
  5. Add the flour mixture to the egg mixture in 3 to 4 additions, folding together until combined, without any lumps.
  6. Once fully combined, pour the batter into the prepared tin and bake for about 45 minutes, or until a skewer inserted into the centre of the cake comes out clean.
  7. Take the cake out of the oven and let it cool for half an hour.
  8. Meanwhile, place the chocolate into a bowl, with a teaspoon of oil, and melt in the microwave, or sit over a pan of barely simmering water (a bain-marie) ((make sure that the water is NOT touching the bottom of the bowl)) and allow the chocolate to melt, stirring occasionally.
  9. Once the cake has cooled down, pour the chocolate over the top and sprinkle with flaked almonds.
