Uni, Dalmatia and all things Summer.
There is a lot going on right now. There’s been a lot going on the past month; mostly I’ve been driving up and down the coast, trying to finish up few different things, more of less successfully, but all in all it’s good, can’t complain much.
I’ve also been trying to bake more, to come up with new gf and vegan recipe for banana zucchini bread because I’ve been craving it for so long, but it was all a mess. Both times I’ve tried it ended up being all mushy and just meh. So I decided to leave it for a while and go back to it when I have more free time during the summer. Also, I’ll be spending pretty much all of my holidays in Makarska, so if you’re around – don’t be a stranger and hmu! We could bake something, or just chill at the beach and soak up what there feels like unlimited hours of sunshine.
Also your fave dream team got together once again and did this cool thing. (More things Jungle coming soon, I’ve been trying to finish it up for weeks and weeks now, but mehh life.)
When it comes to the things I’ve been loving recently, I’ve re-watched Fellini’s ‘La Dolce Vita’ for 158th time, and started planning this mega roadtrip that will finally take me from Costiera Amalfitana and all the way down to Capri :’) Music-wise, it’s all about those chill summery vibes (don’t worry, I got you covered with a playlist at the end of the post 😉 I’m also bringing you a recipe for 24 de-lish choc chip (or should I say, choc chunk) muffins, so let’s get to it!
Ingredients:
- 2 medium eggs
- 125ml vegetable oil
- 250ml milk
- 200g caster sugar
- 400g plain flour
- 3tsp baking powder
- 1tsp salt
- 100g chocolate chips (or chopped chocolate, or even dried fruit and some nuts, or blueberries! possibilities are endless)
Method:
- Pre-heat oven to 200C, and line 2 muffin trays with muffin cups.
- In a medium bowl, sift all the dry ingredients and leave it on a side.
- In a large bowl, lightly beat the eggs and sugar.
- Add the oil and the milk, whisk until just combined.
- Sift in the dry ingredients and mix until smooth, but make sure you don’t over-mix the batter because it’ll make the muffins tough.
- Stir in chocolate chips or other filling of your choice.
- Bake for 20-25 minutes, or until a skewer inserted in the middle comes out clean.
* For the buttercream icing, use 140g of softened butter, 280g of icing sugar and 1-2tbsp of milk. Beat the butter in a large bowl until pale white, add half of the icing sugar and beat until smooth. Add the remaining sugar and one tablespoon of milk, and beat the mixture until creamy and smooth. If necessary, add in a bit more milk to loose the mixture. Using a piping bag, and a nozzle of choice, decorate your cooled muffins and voilà!
